Most E. coli strains are part of healthy gut flora. However, Shiga toxin-producing E. coli (STEC), particularly O157:H7, cause approximately 265,000 illnesses annually in the U.S. About 5-10% of diagnosed cases develop hemolytic uremic syndrome (HUS), a life-threatening kidney condition.
